Although the term originally applied to the practice of cooking meat on a rotating vertical skewer over hot coals, gyros has, by extension, also become the common name of the popular Greek fast food sandwich consisting of rotisserie-cooked meat wrapped in a pita with yogurt (or tzatziki) and other toppings.
Traditionally made with pork, gyros are now available in chicken, lamb and vegetarian varieties throughout the Middle East, North America and Europe.
Ingredients in the gyros sandwich vary from region to region: On the island of Crete, French fries are included in the wrap, fried onions are common on Athenian gyros, and many vendors in Northern Greece serve the gyros with mustard or ketchup.
