Gruyere is a hard cow's milk cheese with a nutty flavor named for the town in Switzerland from which it comes. It is a variety of Swiss cheese.
It pairs well with fruits and crackers and white wines such as Chardonnay or Viognier. Popular dishes using gruyere are fondue, the sandwich Croque-monsieur and French Onion Soup. It can also be grated over pasta and salads.
