Ground Beef Cooking Tips
Use fresh ground beef in dishes that the meat is the focus for best results. Using frozen meat in a casserole or sauce has no difference in the flavor. Leaner blends of ground beef have less fat, resulting in less shrinkage. Cook at a moderate temperature, cooking at higher temperatures will cause more shrinkage. Also, this will have a tasteless dry results because of evaporation of the juices from the meat.
Dip your hands in cold water before handling the meat to avoid ground beef sticking to your hands. When making patties do not overhandle the meat, keep a light touch and do not compact too much.
To keep your burgers from puffing up in middle, make a depression in the center with your thumb. The depression will disappear as the meat cooks.
Never use the spatula to press down on the burger patty, you will loose all the juice and flavor. Turn with tongs or spatula, poking with a fork will loose juices and flavor.

Ingredients need for Lasagna: 1 pound lean ground beef, 1 fresh clove of garlic, minced, 1 large chopped onion, 28 oz. bottle of spaghetti sauce, 1 1/4 cups water, 1 tablespoon sugar, 2 teaspoons oregano, 1 teaspoon basil, salt and pepper to taste, 16 oz. carton cottage cheese, 8 oz. carton plain yogurt, 1/2 cup Parmesan cheese, 2 eggs, 2 cups mozzarella cheese, 8 oz. uncooked lasagna noodles and cooking spray for baking dish.
In a large skillet, brown ground beef, along with minced garlic and chopped onion over medium heat, stirring constantly. When the meat is crumbly and the garlic and onion are clear, remove from heat and stir in spaghetti sauce, water, sugar, oregano, and basil. Salt and pepper, if desired. Mix well and set aside. In a large mixing bowl, combine cottage cheese, yogurt, Parmesan cheese, and eggs. Combine well, and set aside. Start assembling your layered lasagna casserole. Spray a 13-inch by 10-inch dish with cooking spray. Place 1/3 of the meat sauce mixture on the bottom, followed by 1/2 of the uncooked lasagna noodles, overlapped, 1/2 of the cheese mixture, and 1/2 of the grated mozzarella cheese. Take 1 pound of lean ground beef and brown. You did not need to drain. Add 2- 15 ounce of kidney bean with juice or beans of your choice, 1-14 1/2 ounces of diced tomatoes (undrained), 1-10 ounce of tomatoes and green chilies (undrained), 1 package of French's Chili-O mix or other chili mix, 1 1/2 cups water and 1 tablespoon of onion soup mix.
