Grits, a typical breakfast food in the Southern states, is made from the milling of corn kernels.
In the milling process, corn is passed through screens, with the finer parts becoming cornmeal, and the coarser parts becoming grits.
Grits are typically boiled in water until it resembles a porridge. It can be eaten plain with only salt, there are variations that add cheese, bacon, herbs and various vegetables such as mushrooms or squash. Like polenta, grits can be used at almost any meal as a starch substitute for rice, potatoes, or pasta.
