Goat cheese is a soft, tangy white cheese made from goat's milk. The French chèvre is the largest produced and most widely known of goat cheeses.
Goats were thought to be brought to France in the 8th century by the Moors. The Loire valley and Poitou, are regions in France that contribute high productions of the cheese, but notable French chèvres include Bucheron, Chabis, Crottin de Chavignol, Pouligny Saint-Pierre, Pyramide, [[Pélardon]] and Rocamadour.
