Giblet Gravy

Giblet gravy is a type of gravy made with the gizzards and other remaining parts that are usually found in the cavity of the turkey, chicken or fowl. Known for its flavor, the gravy is popular at Thanksgiving. Don't toss out that little bag of weird parts, use it to make this gravy for all your wonderful side dishes including mashed potatoes, stuffing and more.

Making Traditional Giblet Gravy

  • Ingredients
  • 3 tablespoons turkey drippings
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups turkey stock
  • 1/4 cup cooked turkey giblets, chopped
  • 1/2 tablespoon chopped fresh sage
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt

Directions

Over medium heat, warm turkey drippings in a large skillet and add flour slowly while stirring. Once mixed add the turkey stock and whisk until smooth. Add giblets, sage, pepper, and salt and bring to a boil. Reduce heat and simmer for about 10 minutes until mixture is thick.
