French Onion Soup

  • French Onion Soup is traditionally a beef broth soup made with cheese and caramelized onions. A sweet onion that will caramelize well is preferable, such as Vidalia.
  • French Onion Soup Ingredients

    1. Two pounds of sweet onions
    2. Beef or Chicken Broth
    3. 1 cup White Wine
    4. Suggested cheeses: Gruyere, Swiss, Fontina
    5. Garlic, Thyme, Bay Leaf, Sugar, Salt, Black Pepper
    6. Sliced French bread on the side

  • French Onion Soup Recipes

    1. Peel and slice onion lengthwise. Do not chop finely.
    2. Salt and pepper onions and grill for up to an hour, until onions have browned and caramelized.
    3. When the onions have reduced add white wine until it takes on the consistency of syrup.
    4. Add beef or chicken stock and other herbs and simmer for 30 minutes
    5. Remove soup to individual bowls and cover with shredded cheese.
