French fries are strips of peeled potato that has been deep fried in oil and lightly salted or seasoned. French fries are made from a variety of different types of potatoes, including Russet potatoes and even sweet potatoes. How to Prepare
- Peel potatoes, and cut into strips or shape of choice. For shoestring potatoes, use a mandoline with a julienne blade. Place sliced potatoes in a large bowl, and cover with water.
- Drain potatoes, and allow to dry thoroughly dabbing them with a towel or cloth. Add three to four inches of oil to a heavy bottomed pot and heat to 375ยบ
- Slowly add the potatoes to the hot oil, making sure to only make small batches at a time. Adding to much at once will cool the oil. Shoestring and thin cut French fries take between two and three minutes to cook. Larger cuts will take between five and six minutes
- Remove from oil and place on a cloth or paper towel, sprinkle with salt or other seasonings such as garlic, truffle oil, cheese or white pepper.
