Fence your farmer in and you will plant and harvest much faster. Your farmer won't wander off. Buy four fences. Stand on one square, and fence your farmer in around you with the four fences. Turn the fences so that your farmer cannot get out. You have to do this just right, or your farmer just walks around the fences. Once you have it just right, tell your farmer to plant or harvest or whatever needs to be done in those 9 squares. Once those 9 squares are done, move the whole fenced area over to the next 9 squares.
