Fajitas

Fajitas are a Tex-Mex meal usually made with, beef, chicken, pork or shrimp, onions and bell peppers, grilled or stir fried, and served sizzling hot with condiments of Flour tortillas and Mexican fixings on the side.

Preparation

To prepare fajitas start with marinating the beef, (Skirt steak is traditionally used). Any type of marinade will be fine. Use lime juice to tenderize and refrigerate for at least 24 hours. You can also add the onions and bell peppers to the marinade.

In a large frying pan add corn oil heat on medium high, add ingredients, and stir until the meat is cooked. Place in a heat resistant platter and serve with warm tortillas and a condiment platter of cheese, diced tomatoes, diced onions, olives, guacamole and sour cream.
