Evaporated milk is milk that has had about 60% of its' water removed. The product is homogenized and canned. It is often referred to as the cooking milk. When a recipe calls for milk, evaporated milk can be used as a substitute. Evaporated milk gives fudge creamery texture and enhances soups by giving a smooth mouth feel. The process of removing water from whole milk also causes some of the milk sugars to caramelize adding to the flavor. Not to be confused with condensed milk, which has added sugar.
Substitutes
- For a milk substitute use 1 part evaporated milk and 1 part water
- For an evaporated milk substitute use 1 cup water plus 1 cup powdered milk
Serving Suggestions
While evaporated milk can be reconstituted and drank in place of regular milk, it is more commonly used in recipes.
