Evaporated milk is fresh milk that has had about 60% of its' water removed and then canned so it can be stored for a long period of time. Milk is put under a vacuum to remove the water then it's sterilized, homogenized and sealed in cans.
Evaporated milk is used in a variety of recipes and can be found in many households.
