Austin, Texas, firefighter and former professional triathlete Rip Esselstyn is the creator of the Engine 2 Diet, a diet which he says can lower cholesterol, promote weight loss and improve overall health in about one month. The Diet

Rip Esselstyn's Engine 2 Diet is a plant-powered weight loss plan, meaning no meat or fish, no dairy and no oils of any kind. The diet also calls for the elimination of as many processed foods as possible, and increased consumption of whole grains, vegetables and fruits.
