Endive

Endive or Belgian endive, is a leaf vegetable that grows from the chicory root and belong to the Cichorium genus of plants which include radicchio and frisee.

Endive has a slightly bitter flavor and can be used raw in salads or stuffed, baked, or grilled.

History and Medicinal Uses

The Egyptians cultivated the chicory root 5000 years ago. They believed that it was good for the liver and could stimulate the appetite. The Greeks and Romans used chicory as a vegetable and called it "Friend of the Liver".
