Egg Drop Soup

Egg soup, also know as egg flower soup in a traditional Chinese soup consisting of eggs, and chicken and topped with sliced scallions or chives.

Super Easy Egg Drop Soup

Directions

  1. In a large pot add chicken broth and water and set to medium high heat.
  2. Dissolve cornstarch in water and slowly add to boiling broth.
  3. Salt and pepper to taste.
  4. Once the broth is thickened add egg mixture. Make sure to add egg slowly so it doesn't clump. Keep stirring while adding the mixture.
  5. Eggs will cook quickly, approximately 2 minute.
  6. Top with chives.
