Egg Drop Soup

- Also called egg flower soup
- Popular comfort food in China
- Add soy sauce for extra punch

Egg soup, also know as egg flower soup in a traditional Chinese soup consisting of eggs, and chicken and topped with sliced scallions or chives.
Super Easy Egg Drop Soup
- 4 cups canned or fresh chicken broth
- 1 cup of water
- 2 tablespoons of cornstarch for thickening
- 2 eggs (beaten)
- 1 tablespoon scallions or chives (sliced)
- Salt and pepper to taste
Directions
1. In a large pot add chicken broth and water and set to medium high heat.
2. Dissolve cornstarch in water and slowly add to boiling broth.
3. Salt and pepper to taste.
4. Once the broth is thickened add egg mixture. Make sure to add egg slowly so it doesn't clump. Keep stirring while adding the mixture.
5. Eggs will cook quickly, approximately 2 minute.
6. Top with chives.
