Divinity, also known as seafoam candy, is a fluffy, creamy, white candy, made with whipped egg whites, sugar, and corn syrup.
Ingredients
- Granulated Sugar
- Water
- Egg Whites
- Corn Syrup
Optional ingredients include:
- Chocolate
- Coconut
- Peppermint Extract
- Orange Oil
- Brown Sugar replacing granulated sugar
Tips
- Divinity will be difficult to harden in humid weather; Candy making days should be dry days.
- Divinity must reach a specific temperature; A candy thermometer is necessary for a proper consistency.
- Divinity hardens quickly; Quickly place on wax paper to avoid sticking or add several drops of water to help moisten.
How to Make Divinity
- Cook sugar, corn syrup and water in a saucepan until reaching 260 degrees.
- Beat egg whites with an electric mixer until stiff peaks form.
- Pour hot syrup, continuing to mix with the electric mixer.
- Add vanilla extract, continuing to beat until mixture holds it's shape.
- Optionally, add nuts to the mixture at this point.
- Drop mixture onto wax paper using a buttered spoon.
- Allow to cool for at least 12 hours, until firm.
- Store in an air-tight container to avoid moisture causing the candy to stick.
