Puddings recipes have a long history but have changed through the centuries. The old puddings were like sausages that were made with grains mixed with meats. Modern puddings are now usually made with sugar, cornstarch, gelatin, eggs and tapioca.

The Dessert Spoon

A special eating utensil called a dessert spoon is used when eating certain kinds of desserts. This type of spoon is in between the size of a teaspoon and a tablespoon with a standard capacity of two teaspoons. When a table is traditionally set, the dessert spoon would be above the plate, set horizontally. The dessert spoon may be set out at the before the meal starts or may be brought out with the dessert. The rather large size of the dessert spoon requires the diner to eat from the side of the spoon.
