Croissants are thought of as French, but the crescent-shaped pastry may have originated in Vienna, as it is part of a family of puff pastry called Viennoiserie. The laminated dough that makes croissants is time consuming and somewhat tricky to make by hand, but with practice can successfully be made by the home cook. The process of rolling thin layers of cold butter into the yeast dough takes time, and is what makes the croissant flaky and buttery.
