What You'll Need
Ingredients
  • 1 lb green beans, ends trimmed
  • 1 to 3 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • Pinch black pepper
  • Lemon juice (optional)
  • Salt and pepper, to taste

  • Mixing bowl
  • Spatula
  • Baking sheet lined with parchment paper

Directions
1. Preheat oven to 475°F (246°C). Since you'll be roasting the green beans, move one of your oven racks to the middle of the oven. This ensures that they will be evenly cooked throughout.

2. Drizzle enough olive oil over the green beans to coat evenly. Sprinkle the salt over the green beans, then hand toss. Add the pinch of pepper.

3. Use the spatula to spread the green beans on the baking sheet in one even layer. Roast the green beans in the oven for 15 minutes or until they are slightly brown, wrinkled and tender.

4. If you would like, add the lemon juice, along with more salt and pepper. Toss to coat evenly.

*Tip: Slippery hands are a hazard when it comes to using the oven, so make sure to wipe off any olive oil before touching the baking sheet.
