- 1 lb carrots, peeled and sliced
- 1 tbsp lemon juice
- 2 tbsp butter, chopped
- 2 tbsp honey
- Salt and pepper, to taste
- 1/4 cup parsley, chopped

Directions
1. Fill a pot half-full with water, then boil the water on high heat. Once it's boiling, pour in the carrots and let them cook for five to six minutes or until tender.
2. Drain the carrots using the colander. Be sure to wear oven mitts, as your pot handles may be very hot. Pour the carrots back into the pot.
4. Let the carrots cool. The remaining liquid will thicken as it cools. Add a pinch of salt and pepper, if desired, and toss. While wearing oven mitts, transfer the carrots into a bowl. Add the parsley and stir.
Tips
- For even more sweetness, add brown sugar during the glazing process.
- For a different flavor, substitute apple cider vinegar for the lemon juice. Another option is substituting mustard.
