The temperature of stuffing and dressing is critical. Even if the turkey has reached the proper temperature of 180 degrees, the stuffing may not have begun the cooking process. The stuffing needs to reach a temperature of 165 degrees. Cornbread Stuffing Recipe
In this video Barefoot Contessa, Ina Garten, chef on the food network shows how to make cornbread stuffing for stuffing two Cornish Hens. In a pan put 1/4 cup of unsalted butter and 1 cup of chopped onions and cook until onions are translucent. Take 1 stalk of celery and dice and add to onion and butter an let cook a little bit, add 1/2 cup of chicken stock. Crumble about 2 1/2 cups of cooked cornbread. Add to cornbread the onion and celery mix. Add 2 tablespoons of fresh roughly chopped parsley, salt and pepper to taste and stir together. Your stuffing is ready to stuff your Cornish Hens.
Cornbread Stuffing Recipe
This video shows how to make traditional cornbread stuffing that pairs well with any kind of poultry. First put 1/2 stick of margarine in a large skillet, saute 1 cup of onions and 2 stalks of celery over medium heat until tender, about 6 minutes. Remove from heat . Stir in 16 ounce package of cornbread cubes, 1/2 cup milk, 1 cup water, 2 eggs, slightly beaten, 1/4 pepper. Place into a butter casserole dish and bake at 325 degree for 30 to 35 minutes. This is a great alternate for the usual stove top stuffing.
