Variations
Colcannon, which is usually meatless, is a traditional food for fasting during the 40-day Christian observance of Lent. Versions made during Lent are usually austere, the only note of indulgence being a small amount of butter. However, non-Lenten versions may include a half-cup of cream (called Kilkenny Colcannon) or sharp cheddar cheese cheese (a variation called Rumbledethumps).
