A cobbler is a baked fruit dessert with a crumbly or biscuit crust topping. Cobbler-type desserts include Betties and buckles. Buckles often have a cake-like base, while Betties are layered with crumbs and fruits. Cobblers are also known by names such as tart, pie, torte, pandowdy, grunt, slump, buckles, crisp and croustade. Cobber is not a fancy dessert just a great tasting way to use all kinds of fruits and berries.

How to make Cherry Cobbler
Making the filling:- Blanch 4 cups of fresh cherries for 30 seconds to remove the pits.
- Layer the cherries in the bottom of a greased baking pan with 3/4 cup brown sugar, 1 teaspoon vanilla and 1 tablespoon flour.
- Bake in a 425 degrees Fahrenheit oven for 10 minutes.
Making the crust:
- Mix 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda and 3 tablespoons brown sugar in a bowl.
- Cut 4 tablespoons unsalted butter into the flour mixture until crumbly. Add in 2/3 cup buttermilk to make a soft dough.
- Spoon the dough over the top of the fruit mixture and sprinkle with 1 tablespoon brown sugar.
- Bake in a 425 degrees Fahrenheit oven for 20 minutes.
- Serve warm topped with whipped cream or vanilla ice cream.

To begin heat a heavy sauce pan, add 6 cups fresh peaches, sliced, 1/4 cup water and 1 1/2 cups sugar. Cook over medium high heat , allow peaches to boil, then reduce to simmer and cook until peaches soften. While peaches cook mix in a bowl 3 tablespoon flour, 1/4 cup sugar, pinch salt, cinnamon, allspice and nutmeg and combine with a fork. Add to peaches when they are tender and stir constantly until thickened.. Pour peaches into about 8 inch X 10 inch dish. Preheat oven to 400 degree. For top crust mix in a bowl 1 cup flour, 1/2 cup sugar, 1/2 teaspoon salt, 2 teaspoons baking power and 3/4 cup milk.and stir to combine. Pour batter over top of peaches covering them well. Bake for 45 minutes in 400 degree oven until brown. Great served with a scoop of vanilla ice cream.
