The Big Three Chowders
New England clam chowder contains cream or milk, clams, potatoes, onions, bacon and flour or cornstarch for thickening. Manhattan clam chowder uses a clear broth instead of cream and adds tomato to the mixture. Rhode Island clam chowder is similar to Manhattan clam chowder, but some Rhode Island-style recipes omit the tomatoes. -
