The cinnamon roll is a baked pastry made with flour, yeast, sugar, eggs and cinnamon and a popular breakfast item in the United States, Canada and Europe, but are enjoyed anytime of the day. The first cinnamon roll was baked in Sweden. In Sweden cinnamon rolls are known as "kanelbulle", they not as sweet or heavy and have a hint of cardamom, a spice in the ginger family. Yeast has been around since 1,000 B.C and cinnamon and butter since 2,000 B.C.

This recipe uses a cool rise dough, that is very convenient, you make one day and bake the next. In a large bowl put 2 cups of bread flour, 1/2 cup sugar, 1 1/2 teaspoon salt and 2 pkg regular yeast or use can use a rapid rise yeast. Heat 1 stick of butter or margarine and 1 1/4 cups of milk (you can use water, but milk makes a better product), in a microwave to 120 degree. Pour into first mixture and mix for 2 minutes with electric mixer slowly. Then a 1 cup flour and 2 eggs (room temperature), and mix together then blend at high speed for 1 minute. Clean dough from beaters and add flour a little at a time usually take about 6 cups of flour, more or less, to make a soft dough. Sprinkle some flour on your rolling surface and turn dough out on it. Your dough will be soft and sticky. Knead dough for about 8 minutes. It will be a smooth and elastic dough. To check if you have kneaded the dough enough, roll into ball and poke your finger into dough to make a hole if the dough does not quickly close up you have kneaded it enough. Make into ball and cover with plastic wrap and kitchen towel for about twenty minutes to let it rise. Push dough down to get air out. Roll out in rectangle about 17 inch X 20 inch. Pour melted butter on dough to cover, 1/3 cup sugar, cinnamon, and rasins and pecan my be added. Start rolling a long end and roll under until roll up and even it up. Spray pan with cooking spray. Cut into slice about 1 inch thick with dough cutter or knife. Make about 1 dozen. At this point you can cover and put in refrigerator and have for next day or leave on counter for 10 minutes and heat oven to 375 degree for about 25 minutes, they are done when you tap the cinnamon and hear a hollow sound. Frost with 3 cup powdered sugar, 1 teaspoon vanilla, and a little warm water and mix. Pour over cinnamon rolls. Grab a hot cup of coffee and enjoy your cinnamon rolls.
