Christmas fruitcake is a type of dense, rich cake that is popular around Christmas time. The cake consists of a variety of dried or candied fruits, nuts, and spices and is sometimes soaked in Cognac or other types of brandy.

How to Make Fruitcake
- Mix together 1/2 a cup chopped, dried apricots, 1/2 cup chopped, dried pineapple, 1/2 cups chopped, pitted dates, 1/2 cup raisins, 1/2 cup dried cherries, 3/4 cup whole, blanched almonds and 1 1/2 cups walnuts.
- In a separate bowl, mix together 1 cup flour, 1/2 teaspoon baking powder and a pinch of salt. Set aside.
- Cream together 1 1/2 sticks softened, unsalted butter and 1 cup brown sugar. Add in 1 teaspoon vanilla extract and 3 eggs, one at a time.
- Add the flour mixture in gradually. Stir in the fruit and nut mixture.
- Put into a greased baking pan and bake in a 300 degree Fahrenheit oven for 2 1/2 hours.
