What is Christmas Cake?
Christmas cake began as a holiday pudding made from various dried fruits. Over time it grew so tough that it had to be boiled before it could even be eaten. During the sixteenth century the oatmeal component was replaced with flour and they began using eggs, but the end result was still boiled because most households did not have large enough ovens to bake in. The exotic spices used in the Christmas cake were representative of the spices delivered unto the Christ child by the Three Wise Men. How to Make Fruitcake
Chef Danielle Bernabe demonstrates how to make fruitcake, a traditional holiday cake. The recipe used does not use a candied fruit, but uses dried fruit soaked in rum instead. Other ingredients include butter, brown sugar, egg, flour, baking soda, salt, cinnamon, milk and molasses. When adding to the creamed butter, sugar and egg, dry ingredients are alternated with the molasses mixture.
