Christmas Bread

  • Making Christmas Stollen

    • Ingredients:
    • One tablespoon active dry yeast
    • 2/3 cup warm milk
    • One large egg
    • 1/3 cup white sugar
    • 1/2 tablespoon salt
    • 1/3 cup red candied cherries, quartered
    • 2/3 cup diced candied citron
    • Six ounces marzipan
    • One tablespoon confectioners sugar
    • One teaspoon ground cinnamon
    • Directions:
    • Mix yeast with the warm milk and let stand for about 10 minutes. In a separate bowl combine the yeast mixture with the egg, sugar, salt, butter and two cups of flour. Mix well and then pour in the remaining flour. When the dough is ready pull it out of the bowl and onto a board so that you can kneed it out. Add in the currants, raisins, cherries and citron. Kneed all the fruit into the dough. Take a new bowl and oil it lightly and place the dough in the bowl. Cover with a damp cloth and allow it to rise for an hour. Once ready take the marzipan and roll into a rope and place at the center of the flatly rolled dough. Fold the dough and pinch to seal. Preheat oven to 350 degrees. Place the roll upside down on a baking sheet and let rise for another 40 minutes under a cloth. When ready place the loaf into the oven first baking for only ten minutes and then reduce heat to 300, allowing the loaf to bake for 40 more minutes.
