Chocolate Cream Pie

Chocolate cream pie is a single crust pie, filled with a thickened chocolate pudding and is generally topped with whipped cream.

• 3/4 cup sugar
• 6 tablespoons cornstarch
• 1/8 teaspoon salt
• 6 tablespoons cocoa powder
• 3 cups milk
• 1/2 teaspoons vanilla extract
• 1 pre-baked pie crust
• 1 cup whipping cream

1. Boil water in the bottom of a double boiler over medium heat.
2. Mix the sugar, cornstarch, salt, cocoa powder and milk in the top bowl of the double boiler.
3. Place the top bowl onto the double boiler over the boiling water and cook for 10 minutes, stirring constantly.
4. Reduce the heat to low, cover and continue to cook for an additional 10 minutes, stirring occasionally.
5. Remove the pan from the heat and stir in the vanilla.
6. Pour the cocoa mixture evenly into the pie crust and refrigerate for a minimum of two hours.
7. Top with the whipped cream and sprinkle with additional cocoa powder, if desired. Cut into eight slices, serve and enjoy! Refrigerate any unused portions.
