How to Make Chicken Curry
- Heat the olive oil in a frying pan over medium high heat.
- Place the chicken breasts in the pan and season liberally with salt and pepper.
- Cook chicken breasts for four to five minutes on each side, or until browned.
- Remove the chicken from pan and set aside. Reduce heat from medium high to low.
- Add onion and garlic and cook for five minutes, or until the onions are soft.
- Add curry, ginger and masala, if desired, and cook for one to two minutes.
- Add crushed tomatoes, chicken broth and browned chicken breasts. Bring to a boil.
- Cover and simmer for 15 minutes, stirring occasionally.
- Serve and enjoy!
