How It Works
Fresh or frozen cherries are slow-cooked in a caramelized mixture of brown sugar and butter. An alcohol such as the traditionally used cordial Kirsch, or a substitute such as brandy or rum, is then poured on top and lit on fire in a process called flambéing. Once the alcohol has burned off, the warm cherries are served over vanilla ice cream. Cherries jubilee can also be served with cookies or cake.
