Cheesecake is a rich pie or custard, not a cake, consisting of a graham cracker or cookie crumbled crust and a soft cheese filling. In the United States, cream cheese is the most common cheese used, though other soft cheeses can be used as well. Cheesecake flavors are unlimited, ranging from from chocolate to key lime to plain.
Cheesecake can be either no-bake or baked. The baked cheesecake usually contains eggs, requiring cooking, and it has a creamy rich texture. The no-bake cheesecake may be made from a mix or from a recipe, and it has a fluffy light filling, sometimes using gelatin to set. Refrigeration is required for both types. Nuts, candies, and fruits may be added for a change in flavor, and fresh berries, cherry topping, chocolate syrup or shavings or chips can be used to top the cheesecake. Pumpkin and peppermint cheesecakes are popular flavors for the holidays.
American Cheesecakes

Sour cream cheesecake is made with significantly less heavy cream, or does without it completely. Variations of this recipe may utilize a graham cracker crust. This is known as Ann Arbor cheesecake.

Chocolate Cheesecake
The video show how to make a chocolate cheesecake. For the crust you need 1 1/3 cups of graham cracker crumbs, 1 tablespoon of cocoa and 1/2 stick of butter, mix together with mixer. Use hand to form the base in spring form pan. Chill. For filling mix in mixer bowl, room temperature cream cheese, 2 1/2 packages, 3/4 cup of sugar, 1 tablespoon custard power or 1 tablespoon cornstarch along with 1 teaspoon sugar and 1 teaspoon vanilla, 3 whole eggs and 3 egg yolks, 2/3 cups sour cream, 1/2 teaspoon cocoa dissolved in 1 tablespoon hot water and mix all ingredients together. Add 6 ounces of bitter sweet chocolate and fold into cream cheese mixture. Pour into chilled crust. Wrap with foil the bottom and sides of pan. Put into large baking pan and fill about 1/2 up the pan with hot water. Bake 350 degree oven for 45 minutes to 1 hour.
