A common salad, soup and stir fry vegetable, celery grows in bunches of tall, ribbed stalks topped with leaves. The leaves, which are slightly bitter, are usually removed before eating. Often eaten raw with dips, celery is sweeter and easier to digest if it is cooked. Although less common, the seeds, roots and stems of the celery plant can also be used for seasoning foods or in natural herbal medicine. A biennial vegetable, celery is a member of the Umbelliferae family, which includes carrots, parsley, dill and fennel.
