In the Anglophone Islands, curried goat and chicken are eaten along with rice and beans. Also popular in the area is Pelau, a dish that combines chicken, beef, pig tail, saltfish and peas. In Montserrat, Goat Water Stew is the official dish, made of goat meat, tomato, papaya, breadfruit and dumplings. The area also enjoys Callaloo, a soup of vegetables and okra. Seafood enters the region in Barbados, where they are known for their cascadura fish and crab. -
