Cannelloni

Cannelloni (also known as manicotti) are sheets of pasta or crepe dough. They are usually rolled and filled with savory fillings such as ricotta cheese, spinach and meat and covered with tomato sauce the baked.

History

Nicola Federico, born in 1891, was an accomplished chef who invented the cannelloni in 1907, while working at the La Favorita restaurant in Sorrento, Italy. The pasta was originally named strascinati, but then became known as cannelloni.

Cannelloni become a staple in Italian kitchens worldwide. There are hundreds of recipes and countless variation that call for cannelloni including vegetarian recipes.
