Caesar Salad

Caesar Salad, originally prepared table side, was created by Cesar Cardini, an Italian-born Mexican. There are many stories about how exactly Cardini created the salad.

While today, there are multiple variations on the preparation and ingredients of the Caesar salad, romaine lettuce and croutons remain to be constants in the recipe.

Many believe the original Caesar salad recipe contained anchovy, but this was not the case. The flavor actually came from the Worcestershire sauce, and anchovy was never part of the recipe.

Cardini's Caesar salad was made with raw egg, which poses the risk of salmonella infection. Consequently, most modern day recipes of the Caesar salad omit the use of raw egg, and various ingredients have taken its place.
