Burrata is a soft, silky Italian cheese made from the combination of mozzarella and cream.
Burrata was originally made of water buffalo milk beacuse of the richness, high amount of fat, and pure white color. The best Italian burrata is still made with buffalo mozzarella (mozzarella di bufala) and buffalo cream, but most American mozzarella uses cow's milk.
It is made by stretching a thin layer of fresh and heated mozzarella curd around a pillowy blend of cream and more mozzarella curds called stracciatelle, or "little rags" in Italian. It is then wrapped with the leaves of leeks or a plastic bag and refrigerated.
Burrata is best when eaten within 48 hours of opening it and is used fresh in salads or sliced with fresh tomato, basil and drizzled with olive oil or added as a finishing touch to cooked pasta.
