A member of the cabbage family, broccoli is essentially a large edible flower native to the Mediterranean. The plant consists of a large fibrous stalk from which an abundance of flower heads, known as florets, branch, and are surrounded by leaves. North Americans are most familiar with the green Calabrese variety of broccoli, although purple, Romanesco and sprouting broccoli are also available in certain areas. All varieties of broccoli are highly nutritious, being rich in dietary fiber and many vitamins and minerals.

Broccoli is available fresh or frozen in nearly every grocery store. More recently, broccoli sprouts have earned their place in the fresh produce section of high end and specialty grocers. Fresh broccoli is available by the bunch, stack or crowns. Cut broccoli is available freshly bagged and ready for cooking. Fresh cut broccoli may also be packaged with cauliflower and carrots. It is best to purchase fresh broccoli the day you are going to prepare it. Frozen broccoli can be kept on hand for impromptu use.
