  • Bird's Nest Soup is a Chinese delicacy made from the saliva-based nests of certain species of swifts, called swiftlets. Edible bird's nests are among the most expensive animal products consumed by humans.
  • Risk of Extinction

    Swiftlets' nests are in remarkably high demand, driving prices up to $2,000 per kilogram (about 2 lbs) for standard nests, and one million dollars for rarer "red blood" nests. In many regions where swiftlets nest, harvesting is limited by law, but flouting of these regulations has led to the bird's decline.
