Benihana is both the name of a chain of Japanese restaurants and the name of the parent company that owns them. Benihana History
Rocky H. Aoki came to the US from Japan in 1960. For four years he sold ice cream to put himself through restaurant management school. He opened his first Benihana restaurant in New York in 1964. He decided to serve his food teppan-yaki style. Teppan means steel grill and yaki means broiled. The chefs positioned themselves at diners' tables and prepared the food while the diners watched. Business was slow at first, but six months after the opening of the restaurant this changed. Clementine Paddleford of the New York Herald-Tribune published a glowing review that brought Benihana so many customers they had to wait in line.http://www.benihana.com/about/the-benihana-story

Watching the Chef Cut and Grill at Benihana
This video places the viewer at a table in one of Benihana's Teppanyaki restaurants. Teppanyaki means the chef prepares the food on a grill right at the dining table. Customers chat and comment as the chef cooks and cuts food with a bladed spatula and a fork. The chef tosses and catches some of the food and the patrons exclaim in surprise.
