Start by putting a dry rub on brisket, house seasoning, chili powder, small amount of brown sugar, cayenne pepper, onion salt and dried oregano or use your favorite seasoning. Mix all together to create your rub. You can buy these rubs already mix up also. Coat the brisket well and rub in. Cook at 250 degree if you can get the smoker that low. Put on fire and cook slow until 190 degree. The brisket tends to itself. When you think the brisket is ready take a knife and run under it and if it tries to bend in it is done. Take brisket out and let it set for a few minutes before you cut it. Slice the brisket again the grain, otherwise it would be tough and you would not be able to chew it. Enjoy.
