Asiago cheese is an Italian cheese made from cow's milk that differs in flavor or texture depending on how it is aged. As a soft cheese it is mild and slightly tart but has a sharp flavor and closely resembles Parmesan or Cheddar when it is hard.
The flavors of Asiago are grouped into three categories: Dolce which is mildly spicy, Medio which is stronger and aged longer, and Piccante which is hard, sharp and good for grating over foods.
It is made in two regions of Italy: Veneto or Trento.
Asiago can be used in pasta, risotto, pizza, panini or soup. It can also be served with bread, salami fruits, and wine.
