The apricot comes to market in early summer, and its season is quite short. However, dried and preserved, apricots are enjoyed world-wide, year-round. Fresh apricots are high in fiber, beta-carotene and Vitamins A and C. Their soft skin is easier to bite into than a peach, and the fruit is dryer and sweeter than a peach's.
