Your best, tasty, "one pot" recipes? Any photos also? Have you tried the recipe?

Sometimes you just want to use one pot and that is all. Especially good for minimal cooking facilities like camping, cottage, efficiency hotels, or when you are very busy. Anyone tried this with fish also? Thanks.

I love this one pot dish. I like sausage also in mine. We kick ours up a notch with tomatoes and green chili or red pepper flakes. Adjust to your taste. Serve with a warm piece of corn bread or homemade bread. Get better as it sets. Enjoy!

Nine Bean Soup

Serving : 8

1 package Nine Bean Soup Mix
1 quart water
2 teaspoons salt -- optional
1 turkey leg or ham bone & scraps or
1 1/2 pounds chuck roast
1 can tomatoes--28 oz -- chopped
1 large onion -- chopped
1 teaspoon chili powder OR
2 teaspoons dried herbs (thyme, savory, etc)
2 teaspoons lemon juice
brown sugar -- to taste
1/4 cup small pasta

Soak the beans overnight in water and salt. Next day, pour off the water
and add two quarts fresh water and the meat, and bring to a boil over high
heat. Reduce heat and simmer, covered for two hours. Add the tomatoes and onion, chili powder or herbs and the remaining ingredients. Cook 1 hour
more. If the soup gets too thick, add broth or water. Remove the meat,
Chop it in bite size pieces, and return to soup.

This freezes well.

I have tried this recipe, and it's fantastic!

Caribbean Chicken:
Description: A slow-braised chicken dish with sweet potatoes, green bell peppers, coconut milk and a spiced crust. Flavorful cilantro-scented broth turns into a rich sauce. Serve with seasonal vegetables and you have a great meal.
Ingredients: 4 chicken legs with thighs attached, skin on
1/2 cup flour
2 tbs cumin
2 tbs rubbed sage
kosher salt to taste
black pepper to taste
1 cup organic green or red bell pepper, diced
1 cup organic white onion, diced
1 cup large sweet potato peeled then cubed to about 1 inch size, peeled
1 cup organic coconut milk, not sweetened!
2 cups Pacific brand organic chicken broth..or homemade
1 bunch fresh cilantro
4 tbs pure olive oil
Directions: 1. Add spices, salt and pepper to flour then dredge chicken parts in flour. Heat dutch oven over medium high heat, add oil. Saute chicken in heavy dutch oven until well-browned, roughly 10 minutes.
2. Add diced onion and bell pepper, season with a bit more salt and pepper, saute for additional 5 minutes.
3. Add chicken broth, coconut milk, potatoes and cilantro and cook covered for 30 minutes.
4. Remove chicken and thicken sauce with slurry as per video (equal parts cold water & cornstarch, mix well to make slurry), then add to hot sauce stirring to combine.
5. When thick enough, pour over chicken, garnish with cilantro, and enjoy!
