I have an Xbox 360 120GB HD and also 60GBHD. Is there a way I can hook up both to the 360?
For instance, install the 120 in its normal HD interface and then via an adapter of some kind connect the 60GB drive to a USB port.

No. The 360 does not currently allow you to use any external drives at all - you can't even use two "Xbox" hard disks.
