Hi!
Here's the short answer to your question. Without HDMI, the next best output for the 360 is component video. The component video cable also has a port for optical audio out of the XBox 360. Plug the component into your tv, and the optical audio into your stereo unit.
See picture attached.
Remember to make sure your Sony receiver is set to regular Dolby Digital, and not some sound field or effect. This will give you the rich 5.1 sounds from the XBox 360. It really immerses you in the games!

*Turn Dolby Digital and DTS on in the audio options menu of the Xbox.
*When your Xbox is on with no game in it, it dosen't put out 5.1 even with the cable. So if you turn on your xbox once you've hooked the cable up and your reciver says its only going through 2 channels, don't panic, its supposed to do that.
*Most importantly many xbox games don't support dolby digital (5.1). Infact most don't, and it is impossible to get 5.1 surround out of a game that dosen't support it. So check the back of the game where its says the number of players and xbox live info. If a green box says "In Game Dolby Digital" you will get 5.1 surround with this cable. If not, you will only get 2 channels and a sub. So check the game first.
*May not be vital, but unplug your RCA audio from your tv or your reciver before you hook this up.

How do I hook up my Xbox 360 to my home theatre system?
I have an Xbox arcade (no hdmi) and a sony DAV-HDX275 system. Is there a digital optical output on the 360 or can set my samsung TV to send the full surround sound signal through the digital optical output on the back of the TV. Currently, I'm only getting it to play through 3 speakers, not the full surround sound. Please help. Thanks!

HDMI only provides stereo sound, so you do need to have the sound going thru an optical cable if possible, from the Xbox to your home theatre. Had the same problem with my PS3, I was able to change the sound setting on it to optical, you should be able to do the same.

Yes, you can. I was able to purchase a different cable (rather than use the one that came in the box) which provided an optical audio out port. Microsoft offers 3 different cables with either S-video, Component or VGA connectors. I had to purchase the optical audio cable separate as well. http://www.xbox.com/en-US/hardware/catalog.aspx?st=xbox+360+cable&g=0&s=0&p=1&c=10

Connect HDMI from Xbox to TV, optical cable output from Xbox to Home theater input, composite instead if it doesn't . *Turn Dolby Digital and DTS on in the audio options menu of the Xbox.

I agree with the HDMI cable advice. The cable that switches between HD and analog (that someone posted a picture of) does not give full 1920x1080 resolution (it maxes out at 720p). It would be a huge mistake to buy all that nice gear only get 720p resolution out of it. By the way, the Xbox Elite comes with an HDMI cable.

All above answers are wrong! The cable that comes with the XBOX 360 has a built in optical output! You can even see it in the picture above. I am talking about the dark square in the right side of the grey cable. Just right next to the actual cable. Xbox 360's come with optical audio out right out the box. That square has 2 little flaps that open up when you push the cable through. This is my setup. Enjoy!
