Fortune's Tower is pretty good, I actually had a lot of fun playing it. Keystone is very convoluted (and the bloodstone variant even worse) but if you can actually understand the rules it is sort of OK. Spinnerbox plain sucks.
I don't think you have to gamble at all to complete the game, it is just a nice quick way to raise cash. If you have the standalone pub game you can send your money into your Fable 2 character.
Fortune's Tower is really simple: cards are placed on the pyramid from the top. Certain cards catch fire, which means you lose the round. If there's a shield card in the row, you are protected. The top card is hidden, it is used if you don't have a shield card and you are about to lose the row. As each row is done, you are bid a number. If you take that number. that's what the dealer pays you. If you don't, it goes another round until either the dealer runs out of cards or you lose. It's basically a game of chicken, how far do you dare push until the bid is so high that it is not worth going an extra attempt that may have you lose it all. If you make it to the bottom of the tower and you did not use the covered card, then you get the total of all rows.

My tip for fortune's tower is to cash in as soon as you've earned more than your bet. Don't get greedy and wait for more.
None of the games are vital for beating Fable II, but they're a good way to make money. I played the stand alone Pub Games before Fable II came out and had 20,000 gold and lots of nice items to give my player when I started.

Which can I skip over? Which are the ones I definitely have to complete? What are the easiest?

Fortune's Tower gives you the best chance of actually making money. The Spinnerbox game is completely random. It's the same as playing a slot machine. Keystone can be a good way to make money if you bet safely. I usually place two or three chips on all of the outside numbers 7-15 and one chip each on red, black, 3-9, and 12-17. That way you've got pretty good odds to gain on your bet. It's not a lot, but it works.My tip for fortune's tower is to cash in as soon as you've earned more than your bet.
