Yep, you sure can. The only thing you sacrifice is the ability to use the guitar effects (like the wah-wah, echo, flanger, etc) which is only possible with the Rock Band Stratocaster.

All the Rock Band, Rock Band 2, and Guitar Hero World Tour equipment is compatable with each of these games. So if you plan to upgrade to any of the other games, you can buy just the game discs of the other games if you intend to play them.
If you do decide to buy the additional band equipment, I recommend the Rock Band 2 stuff, as it is the newest generation of the Rock Band equipment and seems to be of the highest quality.

Can I use my Guitar Hero 3 Wireless Controller (xbox) to play Rock Band 2?
I don't need the full band set, so I figure I could just get the game disc and use the GH3 wireless controller. Does this work?

All the Rock Band equipment and the Guitar Hero equipment works with either game. The difference is, the Rock Band Stratocaster includes the guitar distortion effects and also has a second set of fret buttons on the bottom of the neck. These buttons are useable in Rock Band to finger through guitar solos in Rock Band without strumming. It's a barely useful feature and one that is emulated on the new Guitar Hero World Tour guitar controller. All the Rock Band, Rock Band 2, and Guitar Hero World Tour equipment is compatable with each of these games. So if you plan to upgrade to any of the other games, you can buy just the game discs of the other games if you intend to play them.
