Wolverine is sweet, but he used to be way to flat for me. The coolest X-Man in my opinion is Gambit. He's cool, his power is awesome, he has a french accent and he has a deep history (growing up in a thief's guild and all that). I don't know if he is currently dead or alive in the Marvel Universe, but he hasn't been featured in the books for a while. Of course he is in the new wolverine movie.
From the X-Universe, but not strictly from the X-Men, I have another favourite: Cable. More cool powers, twisted history (son of cyclops from the future... wtf?) and for a while the coolest sidekick ever, Deadpool.

Definitely Wolverine. It's not even close for me.
I love Nightcrawler. The back-story is very interesting. And I really enjoyed Alan Cumming's take on the character.
